Yesterday evening I made stewed cabbage with smoked tofu for todays lunch. I always loved stewed cabbage, but before I got vegetarian/vegan 4 month ago, I actually did it with mince. Since I love smoked tofu, I thought I should try it with cabbage. 🙂
And it worked out really good and was just delicious. Have a look:
Recipe for 1 person:
100 g smoked tofu
1 small cabbage (about 250 g)
2 tablespoons olive oil
about 150 ml water
salt
pepper
2 teaspoons bear’s garlic (lovely alternative to garlic)
1 or 2 slices of whole-grain bread (or if you like: potatoes)
Just slice the cabbage into fine slices. Heat 2 tbsp. olive oil in a pan and then add the cabbage. Sear the cabbage for about a 2 minutes. After that add about 150 ml water and 1 teaspoon salt. Let it cook for about 10 – 12 minutes to boil the water down until there is no more water.
Crumble the smoked tofu and add it to the cabbage. Add 2 teaspoons of bear’s garlic and season it all with salt and pepper. Then sear it a second time (add more olive oil if you like). Don’t forget to taste. 😉
Serve the stewed cabbage with smoked tofu with 1 or 2 slices of nice fresh whole-grain bread . Or if you like with potatoes.
