It’s CHRISTMAS time and I just had to bake. ♥
Because I always like fruity muffins, cakes and cupcakes, I did apple muffins with crumbles with a hint of cinnamon. Everything should be with crumbles.
They are so fluffy, fruity and YUM! And the cinnamon adds the christmas feeling and taste you need.
Recipe for 12 muffins:
muffin dough
3 medium apples
50 g margarine
85 g cane sugar or brown sugar
20 ml sunflower oil
2 tsp carob gum
175 g flour
2 tsp baking powder
0.5 tsp baking soda
1 tsp cinnamon
crumbles
50 g flour
50 g cane sugar or brown sugar
2 tsp margarine
0.5 tsp cinnamon
Preheat oven to 180 °C. Peel apples, remove seeds, cut into small pieces and boil in a small pot with a little water until the apples are soft. Put muffin baking forms into a muffin baking tin.
Make crumbles out of flour, sugar, margarine and cinnamon. Put aside.
Mix all ingredients (flour, sugar, margarine, baking soda, sunflower oil, carob gum, baking powder, cinnamon) to a sponge mixture (it’s going to seem very dry) and finally fold in the stewed apples. Fill the dough into the muffin baking forms (only half full), put crumbles on top and press them down lightly.
Bake muffins for about 20 minutes in the oven and after that let them cool down on a cooling rack.
