For 4 portions:
1 big broad sweet potato
1 ripe mango (e.g. Eat me from Nature’s Pride)
2 rods of lemongrass (e.g. Eat me from Nature’s Pride)
1 scallion
4 stalks of basil
1/2 lime, towelled peel and juice (e.g. Eat me from Nature’s Pride)
1/2 tsp. piment d’espelette (or chili flakes)
salt
pepper
Cut the mango in little cubes. Cut the scallion into little pieces and mix it under the mango.
Wash and take off the hart outer leaves of the lemongrass. Cut the inner soft part into fine pieces.
Take the basil leaves and mince them. Mix them carefully under the salsa together with the lemongrass and the piment d’espelette.
Season with the lime peel and juice and salt and pepper.
Wash and peel the sweet potato. Cut the sweet potato lengthways into 0.5 cm thick slices. Toast them on the highest level for two or three times (depends on how strong your toaster is).
Put the mango salsa on the sweet potato toast and enjoy!
