For 1 Mojito with Gin and Lemon Grass Syrup:

35 ml Tanqueray London Dry Gin (very fruity)
1 lime
17,5 ml lemon grass syrup (recipe see down below) (you can use normal sugar syrup as well)
35 ml apple juice
10 mint leaves (and some to garnish)
About 7 ice cubes
Wash the mint leaves, dry them and squeeze and roll them between your hands to get out all the aroma.
Wash, dry an quarter the lime. Put it into the glass together with the mint leaves and press on them.
Fill in the gin, the lemon grass syrup and the apple juice. Top off with ice cubes and if needed with some water (or apple juice). Garnish with some mint leaves.

For the lemon grass syrup (for 2 monjito with gin):
1 rod lemon grass
1 lime
3 tbsp. sugar
Put the juice of the lime in a small pot and add the sugar. Cut off the top and end of the rod of the lemon grass and peel off the outer fibrous leaves. Cut the inward of the lemon grass in pieces and add it to the lemon juice and sugar. Heat up under medium heat, don’t let it boil up. Stir well until the sugar has dissolved completely and resulted into a thick syrup. Let the syrup cool down and strain through a sieve.
