How can you not love these crispy avocado fries with curry sauce?! 🙂
Recipe for 2 portions starters:
1 large avocado, sliced
Some lemon juice
Salt
Pepper
Flower
Some flour
1 egg, lightly beaten
Some panko bread crumbs
Olive oil
Preheat your oven to 400 °F. Drizzle some olive oil into a baking dish and set aside.
Drizzle some lemon juice on the avocado slices, then season with salt and pepper. Then dredge in flour, in egg and then coat them with panko breadcrumbs. They have to be covered very well with panko breadcrumbs.
Then spread in a single layer in the baking dish. Then drizzle with some olive oil so they get really crispy.
Bake the avocado fries for about 15 minutes until they are golden and crispy.
Recipe for the curry dip:
60 g cream cheese (e.g. a vegan one)
1 tsp. curry powder
1 tbsp. olive oil
1 pinch piment d’espelette or chili
salt
pepper
Mix the cream cheese with the olive oil, the piment d’espelette, the curry powder and two pinches of salt. If its to dry add more olive oil.
