Pizza dough (for 4 midsize pizzas):
500 g / 16,7 oz. flour (all purpose flour)
300 ml / 10,1 fl.oz. lukewarm water
2 tsp. salz
5 g / 0,17 oz. fresh yeast
Pizza sauce:
1 can of peeled tomatoes (or just canned tomateos)
1 garlic clove
1/2 tsp. sugar
6-8 leaves fresh basil
1 tsp. oregano
salt
pepper
Toppings:
pineapple (canned, unsweetend or fresh)
grated cheese
mozzarella
(or: almond paste cheese)
Preheat your oven to the highest temperature (about 482 °F or 250 °C) before you want to make your pizza.
Sift your flour together with the salt and put it together in the bowl of your food processor with your dough stirrer. Dissolve the fresh yeast in the lukewarm water and put it to the flour. Let your food processor knead the dough for about 20 minutes until its a homogenous and flexible dough. (You can use a hand mixer with a dough hooks, too, but its not ideal.)
After that cover the dough with a moist kitchen towel and let it rest for about two hours. The next step is to divide your dough into four pieces, shape them into balls and let them rest for another six hours. Or you can put the dough in the fridge over night (just but the dough in a freezer bag and close it very good). After the time in the fridge just let the dough rest outside for another hour and its good to go.
Before you can put your toppings on your pizza, you have to roll your dough as thin as possible. You can pull the dough gently as well. Its perfect if the dough is no thicker than half a centimeter (0,4 inch).
For your pizza sauce you take the canned tomatoes and the rest of the ingredients and purée them all together with your immersion blender. Finished.
Put your rolled out dough on baking paper on your baking tray. Spread pizza sauce on it and put the toppings of your choice on top. For example pineapple, mozzarella and grated cheese (vegan cheese is possible as well or the yummy almond paste cheese I made). Then its time for the oven!
The pizza should be ready in just a few minutes. Watch her and pull the pizza out, when she looks perfect for you! Everyboday has a different taste there! 🙂
