Grannies recipe: plum muffins with crumbles ❤
Recipe for 12 muffins:
Muffin dough
250 g plums (stoned)
280 g flour
120 g sugar
250 ml soy milk
6 tbsp. sunflower oil
2 teaspoons carob gum and 2 tbsp. soy milk (or 2 eggs)
1/2 tsp. baking soda
3 tsp. baking powder
1 tsp. vanilla paste (or 1 tsp. grounded vanilla)
Crumbles
50 g flour
50 g sugar (brown one if you have)
2 tbsp. margarine
½ tsp. cinnamon
Preheat the oven to 180 °C (top and bottom heat).
Pit the plums and cut them into little cubes. Put three plums aside, pit them and cut them into half and then into stripes.
Mix all the ingredients for the muffins very well. Then fold in the plums.
For the crumbles: Put all ingredients in a bowl and knead it with your hand until everything is mixed well and you have really nice crumbles (the should be really crumbly and not soft like a dough).
Coat the muffin baking form for twelve muffins with sweet little muffin paper (I took the ones I got for my birthday) and fill up 3/4 with dough. Put crumbles on top and two plum stripes. Bake for about 20 minutes.
