Delicious hearty muffins stuffed with avocado and cheese. ❤
280 g flour
2 eggs
1/2 tsp. bicarb
3 tsp. baking powder
250 ml milk
6 tbsp. sunflower oil
salt
pepper
1 midsize avocado
3 tbsp. grated cheese (e.g. Gouda)
1 splash of lemon juice
6 cherry tomatoes
Preheat the oven to 180°C (360°F) upper and bottom heat
Mix together the flour with the bicarb and baking powder. Add the milk, eggs and sunflower oil and mix well (I let my food processor do the work). Season with salt and pepper.
Cut the avocado in half, remove the pit, carve out with a tablespoon and cut into little cubes. Add a splash of lemon juice and mix in the grated cheese. Season with salt and pepper.
Cut the cherry tomatoes in slices.
Grease a muffin pan for 12 muffins and add a tablespoon of dough. Smooth to the bottom with a teaspoon. Put about 1 to 1,5 tsp. avocado cheese mix in the middle. Cover with about 1 tbsp. of dough. Put 2 slices of cheery tomatoes on top.
Bake for 20 minutes on the middle rail.
Take the muffins out of the oven, let them cool for about 20 minutes in the muffin pan. To take them out of the pan cut the edges with a knife and lever them a bit. Unhinge the muffins very carefully.
