Recipe for 4 servings:
1 role puff pastry
400 g strawberries
100 g soft goat cheese
50 ml milk
1 egg
A good balsamic vinegar (the more old, the better)
Fresh basil
Salt, pepper
3 pinches of piment d’espelette
Some margarine or butter
4 little casserole dish
Preheat the oven to 200 °C (390 °F) (or like the puff pastry says).
Mix the soft goat cheese well with the milk. Season well with three pinches of piment d’espelette, salt and pepper. Taste and season as you like. Then mix in the egg.
Wash the strawberries, cut off the stern and cut into little pieces.
Spread some margarine or butter into the cocottes. Take out the puff pastry of the fridge and line it in the cocottes. Fill the mini casseroles with 3/4 of strawberry pieces and fill up with the soft goat cheese mix.
After that bake it all for about 20 minutes. Let it cool off a bit and garnish with fresh basil and some balsamic vinegar.
