Recipe for 12 muffins:
250 g fresh strawberries (washed and cut into little pieces)
280 g flour
120 g sugar
250 ml soy milk
6 tbs. sunflower oil
2 teaspoons carob gum and 2 tbsp. soy milk (or 2 eggs)
1/2 tsp. baking soda
3 tsp. baking powder
1 tsp. vanilla paste (or 1 tsp. grounded vanilla)
Topping: white spreading vegan chocolate or just white chocolate
Preheat the oven to 180 °C (top and bottom heat).
Mix all the ingredients for the muffins very well. At last fold in the strawberries very carefully.
Coat the muffin baking form with sweet little muffin paper (i took red ones with white dots of course) and fill up 3/4 with dough. Bake for about 20 minutes.
If you like you could add white vegan chocolate or just white chocolate on top. It can be the icing on the cake. ❤
