Bagel
3 1/2 cups flour (just normal one)
1 3/4 cups milk of choice or water
2 1/2 tsp. yeast or 1 packet
3 tsp. guar gum powder
2 tbsp. sunflower oil
1/2 tsp. salt
1/4 cup diced fresh apple
Topping
1/2 cup diced fresh apple
1/4 cup sugar
1/4 cup brown sugar
2 tsp. ground cinnamon
1 tbsp. margarine
Bagels:
Preheat the oven to 450 °F upper and bottom heat.
Heat up the milk (or water) to 110 °F (its a little bit more than hand warm or you can use a thermometer). Add the yeast, mix well and allow it to sit for about 5 to 10 minutes or until its foamy.
Take a baking (parchment) paper and cut it into 8 individual pieces.
Take a bowl and mix together flour, guar gum powder and salt.
Than take a large bowl (e.g. the bowl of your food processor) and combine the yeast liquid and oil together. Mix in all the flour mixture gradually until you get a smooth dough.
Wash, peel, core and chop an apple into small pieces. Divide the chopped apple into 1/4 and 1/2 cup. Gently fold in 1/4 cup of the diced apple into the dough.
Use an oiled 1/2 cup. With wet hands form the dough into a ball and use your pinkie finger to poke a small hole in the center (not too big or the topping will fall through). Slightly flatten the dough to give them the bagel shape only expanding the hole a little. Place the bagel on one of the individual piece of baking (parchment) paper on a baking sheet lined with baking paper.
Spray or coat the bagel tops with oil, cover with plastic foil and allow them to rise in a warm place for about 20 minutes.
Bring a large pot of water to a rapid boil. Then gently drop in a maximum of 2 bagels in the water and boil each side for only 30 seconds. The individual baking paper will fall of. Place the cooked bagels on the baking sheet covered with baking paper.
Topping:
Mix together all the spices, 1/2 cup of chopped apples and sugar. Let the margarine melt in a small pot. Gently mix it into the sugar-apple-spice-mixture until until sugar is coated. Apply 2 tsp. full of apple and sugar mixture per bagel.
Bake the bagels for about 14-16 minutes until they are golden brown.
