How about yummy Fried Rice, but low carb? This fried cauliflower rice with vegetables will amaze you! 🙂
Recipe fo 3-4 persons:

1 small cauliflower (400 g)
1 garlic clove, pressed or cut into little pieces
75 g peas (frozen)
2 midsize carrots, peeled and cut into cubes
60 g sugar snaps, washed and ends cut off
2 green onions, cut into rings
1 little onion, cut
3 tbsp. butter
2-3 tbsp. soy sauce (or more if you like)
1/2 tsp. sesame oil
Heat up a half tablespoon of butter in a large frying pan over medium-high heat until the butter is melted. Make scambled egg and put it aside on a plate.
Put another additional tablespoon butter in the pan and let it melt. Then add the carrots, peas, onion and garlic. Season with a little bit of salt and pepper. Roast for about 5 minutes until the carrots an onions are soft.
After that increase the heat to high and add another 1,5 tablespoons of butter and let it melt.
Add very quick the cauliflower rice, green onions and soy sauce. Mix very well until all ingredients are combined. Roast for another 3 minutes to fry everything.
Add the scrambled eggs and fold in gently. After that add the sesame oil and stir gently. Remove from the heat and enjoy!
