drunken pasta: rotwein-spaghetti mit parmesan, basilikum & bröseln | red wine pasta with parmesan, basil & crispy breadcrumbs (vegan) ❤

Recipe for 2 persons:

250 g spaghetti
1 garlic clove
2 tbsp. olive oil
1/2 bottle of red wine (dry)
1 tsp. sugar
30 g parmesan (shaved) (hard cheese)
1/2 bunch of basil
30 g breadcrumbs and 1 tbsp. margarine (or butter)
salt, pepper
40 g pine nuts

First cook the spaghetti in cooking salty water. Then drain the spaghetti and put aside.

Put the olive oil in a big frying pan and brown the cut garlic clove in it.

Add the sugar and half the bottle of red wine and bring it to boil.

Put the spaghetti back into the wine, add some salt and let it boil for another 8 to 10 minutes (depends on how long the pasta needs to be al dente). The red wine should be absorbed by this time. Season with salt and pepper.

Meanwhile roast the pine nuts without oil in a frying pan.

Then melt the margarine (or butter) in a pan and add the breadcrumbs. Let them brown real nice. Chop the basil.

Mix the basil into the red wine pasta. Then add some parmesan, breadcrumbs and pine nuts on top of the red wine pasta.
