Spaghetti with Avocado Peas Sauce ❤

Recipe for 2 persons:

125 ml soy cream
150 g peas (frozen)
1 shallot
1 avocado
some olive oil
1 tbsp. cutted parsley (fresh or frozen)
pepper
salt
2 tbsp. pine nuts (roasted)
pasta (one you like, I like whole grain spaghetti)

Cook water in a big pot for the pasta. Add salt. Taste the water before adding your pasta of choice.

Peel and cut the shallot in little pieces. Heat up the olive oil in a pan. Sautée the shallot in the oil. Then add the soy cream. Season with salt and pepper. Put in the peas in the sauce and let it simmer for about 10 minutes.

During the sauce simmers, cook the pasta until its “al dente” and roast the pine nuts without fat in a pan.

Cut the avocado in half, remove the pit and cut both half in slices and then in cubes, just in the shell. After the 10 minutes of simmering put the avocado pieces in the sauce, you can squeeze them out (it works). Scrape out the shells and put it into the sauce. Fold in the avocado into the sauce and let everything simmer for 2 more minutes. Add the parsley. Finished!

Serve the pasta and put the sauce and the pine nuts on top. Enjoy! 🙂
