Spinach Feta Muffins with Pine Nuts

Recipe for 12 muffins:

280 g flour
2 tbsp. carob gum & 2 tbsp. soy milk* (you can use 2 eggs if you like as well)
1/2 tsp. baking soda
3 tsp. baking powder
250 ml soy milk (or another milk)
6 tbsp. sunflower oil
50 g fresh baby spinach
50 g pine nuts
50 g feta cheese
salt

Preheat the oven to 180 °C (top and bottom heat).

Mix flour, carob gum, baking powder and baking soda very well. Add soy milk (2 tbsp. more because of the carob gum or the eggs), the sunflower oil (you can use a different oil if you like) and mix everything to a nice dough.

Wash the spinach, chop them in half very roughly. Roast the pine nuts in a frying pan without any oil. Be careful, because they burn really quick. Put some pine nuts aside for later. Mix the spinach and the pine nuts into the dough and season everything with salt (take as much salt as you like). Crumble the feta cheese roughly and fold it into the dough very carefully.

Spread the dough into the 12 muffin moldings, put some pine nuts on top and bake them for 20 minutes.

Take them out of the oven, let them cool down on a baking grid and just enjoy them. ❤
