Recipe for 12 muffins:
100 g little salty pretzels
280 g flour
120 g sugar
250 ml soy milk
6 tbsp. sunflower oil
2 teaspoons carob gum and 2 tbsp. soy milk (or 2 eggs)*
1/2 tsp. baking soda
3 tsp. baking powder
1 tsp. bourbon vanilla paste* (or 1 tsp. grounded vanilla)
Nutella or nut nougat spread
Preheat the oven to 180 °C (top and bottom heat).
Mix all the ingredients for the muffins very well. But not yet the nut nougat spread
Coat the muffin baking form with sweet little muffin paper and fill up half with dough. Than add a little blob of “nutella” with the help of two teaspoons. Add some more dough on top until the muffin paper is 3/4 full.
Bake the muffins for about 20 minutes. Then let them cool down and sprinkle some nut nougat spread on top. Finish with a little salty pretzel.
